1 lb Lump Blue Crab
½ lb Jumbo Lump Blue Crab
1 ½ cup ½” broken saltines
¾ cup Dukes mayonnaise
1 ea Whole eggs
1 tbsp Dijon mustard
1 tbsp Worcestershire
½ tsp Tobasco
1 tbsp Melted butter 

1. Carefully break all crab into large, natural lumps and spread evenly over sheet tray, sprinkle with broken saltines 

2. In a mixing bowl mix Dukes, egg, mustard, Worcestershire, Tabasco, and melted butter 

3. Evenly drizzle the mixture over the crab meat and very gently fold together = avoid breakage 

4. Let the mixture sit for 2-3 minutes 

5. Form cakes by hand into mounds about 3” in diameter 

6. Do NOT pack the mixture too firmly
