Originally from the East Coast. Growing up in the suburbs of Washington, DC and London, England. Exposed to many cultures at an early age. Food has been a passion from the beginning. Whether discovering wine or learning about food, my parents were always there to encourage my development.
Began cooking professionally at sixteen. Spent time with many celebrity chefs including Michael Mina, Roy Yamaguchi, Don Pintabona, Todd English and Wolfgang Puck, I have been able to grow my passion for food into a rewarding career. Culinary education has earned me two degrees from Santa Barbara Culinary, two certificates from The Cordon Blue and earned the title Certified Executive Chef from the American Culinary Federation.
Today, I have been working in the restaurant industry for more than 30 years, working as a Regional Executive Chef, Chef de Cuisine, Research & Development Chef, Culinary Director and Corporate Executive Chef for Barrel & Bushel, The Mina Group, The Ritz Carlton, The Cheesecake Factory, Bottega Louie, Farmers Restaurant Group and Yardbird Southern Table & Bar

Chef Charles’ career has taken him to Brazil, France, Denmark, Italy, Spain, New York City and beyond. Through his culinary journeys, Chef Charles has rubbed elbows with grand consulates and bartered for spices in markets unknown to the world.
He has seared fish in a fire built by hand in the Cayman Islands, roasted duck in Rio, and learned to speak six languages in between. All of Charles’s experiences have shaped his critically acclaimed style of cooking. Each meal Charles prepares is a journey through the places that he loves most- filled with complex and
